Chinon wine, already predominant when French royalty lived in our area, is once again a wine reserved for a demanding clientele, thanks to the efforts of its expert winemakers. The legend of Saint Martin is intimately connected to the work of winemaking. Tradition tells us that he introduced grape vines in Touraine and his donkey is said to have taught the locals how to prune them. On November 11, Saint Martin’s saint’s day, we “martinize” the new wine, that is we taste it to verify its quality before the winter frosts.
